Spiced Chia Pudding with Spinach-Pear Mousse


I would like to share this amazing cup of goodness with you.

Pretty, nutritious and mega tasty.
This cup is packed with protein, vitamins and minerals, all you need to start your day strong.

The bottom layer is spiced chia pudding.
I made it super creamy, and I added some extra spices, so it tastes almost like a dessertπŸ˜‹
The second layer is a coconut yogurt, but you can use any yogurt you like.
Then I layered it with my favorite, puffed quinoa, but you can use, granola or nuts.
I topped it with a spinach - pear smoothie and fresh pomegranate seeds.

Heavenly tasty!!!!

Spiced Chia Pudding:


* 1/4 cup chia seeds
* I cup coconut yogurt
* 2 cups almond milk
* 2 Tbl maple syrup
* 1 Tbl vanilla extract
* 1 Tbl fresh ginger, grated
* 1 Tbl lemon zest ( zest from 1 lemon )
* 1/8 tsp cardamom

Mix everything together and let it stand on the counter for 10 minutes. Stir everything again and place it in the refrigerator for at least half an hour. You can double the recipe and store it in the refrigerator for a few days.

Spinach - Pear Smoothie:


* 2 cups fresh spinach leaves
* 1 pear
* I cup almond milk
* your favorite protein powder (optional)
