Poached Pears
How to poach pears:
* 6 Bosc pears (with stems), peeled and cored from the bottom
* 6 cups of water
* 2 cups of sugar
* 2 Tbl honey
* zest of 1 lemon cut into stripes
* 1 cinnamon stick broken in half
* vanilla bean, cut lengthwise and seeds or 1 Tbl vanilla extract
* 1 3/4 inch fresh ginger, peeled and cut into small piece
* 2 cups of sugar
1. I a saucepan large enough to hold 6 pears combine water, sugar, honey, lemon zest, cinnamon and ginger. Scrape in the seeds from the vanilla bean and add the bean and seeds to the saucepan.
2. Bring the mixture to a simmer and add pears. Simmer pears, stirring occasionally and very gently, making sure that pears are covered with liquid, for about 15-20 minutes. They should be tender. Remove them from the liquid and allow to cool.
3. Continue to simmer the liquid until it thickens ,another 15 to 20 minutes.
4. Cool to room temperature.
5. Place each pear on a small serving dish with a scoop of vanilla ice cream and drizzle with ginger, honey, cinnamon syrup.
