Baked Apples, Pears, and Cranberries

This Baked Apples, Pears and Cranberries casserole is a great breakfast choice, afternoon snack, or you can serve it warm with a scoop of vanilla ice cream for dessert.

It may be assembled up to 1 day ahead, just cover it tightly and refrigerate until ready to bake.

The combination of juicy apples and pears with cranberries is just so delicious and the hint of cinnamon makes this casserole a great dish for this time of the year.

Ingredients:



  • 3 Fuji apples, cored and chopped

  • 3 Granny Smith apples, cored and chopped

  • 3 pears, corned and chopped

  • 1 ( 12 oz) package fresh cranberries

  • 1/4 cup sugar

  • 1/2 cup all-purpose flour

  • 1 tsp ground cinnamon

  • zest and juice from one orange

Streusel Topping:

  • 3/4 cup firmly packed brown sugar

  • 1/3 cup all purpose flour

  • 1/3 cup rolled oats

  • 1/4 cup unsalted butter


Prepare Streusel Topping: in a medium bowl, stir together brown sugar, flour, and oats. Using a pastry blender, cut in butter until mixture is crumbly.


Instructions:

  1. Preheat oven to 350 F.

  2. Spray a 13 x 9“ baking dish with cooking spray.

  3. In a large bowl, stir together apples, pears, cranberries, sugar, flour, cinnamon, orange zest and juice. Spoon into prepared pan.

  4. Sprinkle with Streusel Topping.

  5. Bake until hot and bubbly about 45-50 minutes.
