Instant Pot Blueberry and Plum Crisp

Last night I wanted to make something quick, but on the healthy side for our dessert, and I thought why not use my best friend, Instant Pot. 
I just bought some fresh plums and blueberries, so I decided to try to make a Blueberry Plum Crisp in Instant Pot. 
It was amazing, so good that I couldn’t resist another serving this morning for breakfast. I could eat it all day😄. 
Last night I served it warm with ice cream and this morning with a little bit of Greek Yogurt. You can serve it without any toppings, it’s soooo.. delicious.

Ingredients :

Fruit Filling :

  • 8 plums

  • 2 cups blueberries

  • zest from one lemon

  • 1 Tbl lemon juice

  • 1 Tbl raw cane sugar

  • 1 tsp cinnamon

  • 1 Tbl cornstarch

  • 1 Tbl water

  • cooking spray or oil for the pot (neutral-flavored)

Crisp Topping:

  • 1 cup oats

  • 1/2 cup butter

  • 1/2 cup almond or oat flour

  • 1/2 cup chopped, roasted pecans

  • 1/3 cup brown sugar

  • 1 tsp cinnamon

  • pinch of kosher salt

Method:

1. Cut the plums into wedges ( eight wedges per plum ).

2.Coat the Instant Pot with cooking spray or oil, to prevent fruit from sticking.

3.Add the plums and blueberries to the pot. Top the fruit with sugar, lemon zest, lemon juice and cinnamon.Stir gently to coat the fruit.

4. Let stand for 5 minutes.

5.Secure the Instant Pot ligand select pressure cook mode and select the cook time 1 minute.

6.In the meantime prepare the Crisp Topping.In a large skillet, melt the butter and combine with all ingredients : oats, flour, pecans, brown sugar, cinnamon, and salt. Cook stirring frequently for about 5-7 minutes. Set aside.

7.After cooking is completed, perform a quick pressure release by carefully switching the Pressure Release knob from Sealing to Venting.

8.In a small bowl mix together corn starch and water. Open the lid and pour it into the fruit filling. Select the Sauté mode to bring the filling to a boil and stir gently for 1 minute. The filling should get slightly thicker.

9.Transfer the plum and blueberry filling to serving dishes and sprinkle with Crisp Topping. Serve with ice cream, whipped cream, yogurt or solo.
