 Spinach Artichoke Stuffed Mushrooms

Spinach Artichoke Stuffed Mushrooms

Makes: 12

Ingredients

  • 12 large cremini mushrooms, stems removed

  • 2 tablespoons olive oil

  • 1 onion, chopped

  • 4 garlic cloves

  • 1 16oz can artichokes

  • 1/4 teaspoon Italian seasoning

  • salt and pepper

  • 1 small package ( 10 oz or 12 oz) frozen spinach, thawed

  • 1/4 cup mozzarella cheese

  • 4 ounces goat cheese, softened

  • red pepper flakes

  • fresh chives for garnish (optional)


Directions:

  1. Preheat oven to 400F

  2. Clean mushrooms with a damp paper towel ( don’t wash them, they will soak up water like a sponge).

  3. In a large skillet heat olive oil, add onions, sauté until translucent.

  4. Place thawed spinach over several sheets of paper towel and squeeze moisture from spinach.

  5. Add artichokes, garlic, Italian seasoning, salt, pepper and cook for about 5 minutes. Add spinach, mix to combine and sauté for 1 more minute.

  6. Place artichoke/spinach mixture in a food processor. Pulse 5 times ( you want the mixture to be chopped, but not mushy)

  7. In a medium size bowl combine artichoke/spinach mixture with mozzarella cheese and goat cheese. Add red pepper flakes and mix well.

  8. Spoon mixture, about 1 Tbl into prepared mushrooms cups.

  9. Place mushrooms on lined with parchment paper baking sheet and bake in preheated oven for 20 minutes.

  10. Garnish with chives (optional)
