Peach Cobbler Chia Pudding

Peach Cobbler Chia Pudding

Makes: 4 servings

Ingredients :

  • 1/4 cup chia seeds

  • 1 cup plant based milk ( or milk of your choice)

  • 1 Tbl maple syrup

  • 1/2 tsp vanilla extract

  • 2 peaches

For the topping:

  • 1 Tbl butter

  • 2 Tbl quick oats

  • 1 Tbl almond flour

  • 2 tsp light brown sugar

  • 3 Tbl chopped walnuts

Instructions:

Mix chia seeds with milk, vanilla extract and maple syrup. Let it stand for 10 minus and stir it again. That would prevent chia seeds getting clumpy. Refrigerate for at least an hour or overnight.

In the morning blend two peaches in a small blender. Spoon chia seed pudding into glass jars and top it with peach mousse.

Melt butter in a small saucepan and mix with oats, almond flour, sugar and walnuts.Divide your topping into the jars.
