Kohlrabi Slaw
Kohlrabi takes me back to my childhood. Kohlrabi is a vegetable that’s related to cabbage and it’ a staple vegetable in Poland. As kids we would walk to farmer’s markets that are widely available in big cities in Eastern Europe, and get a bunch of kohlrabies and snack on them in the afternoon. Sometimes they wouldn’t even make it home, we would just eat them on the way.
Kohlrabi is an excellent source of nutrients and vitamins. One cup of kohlrabi provides 93% of your daily vitamin C needs and other antioxidants .
Raw kohlrabi bulbs can be chopped or grated into salads, or as a snack with hummus. It can be cooked or added to stir fry, or soups. Kohlrabi leaves are also very nutritional and can be used in salads or soups.
Kohlrabi Slaw
Ingredients :
3 kohlrabi bulbs - peeled and cut into matchsticks
1/2 cup cilantro ( one small bunch )
1 jalapeno - minced
2 Tbl red onion
Dressing:
lime zest and juice from 1 lime
1 inch ginger - peeled and shredded
1/4 cup olive oil
1/4 cup honey
1 tsp kosher salt
1 Tbl rice wine vinegar
Note:
I like to make it a day ahead, so the kohlrabi absorbs the flavor of the dressing.
Serve it with your favorite sandwich or as a salad.
