Plum Cake Bars

Plum Cake Bars

Ingredients :

  • 2 1/2 cup all purpose flour

  • 1/2 cup light brown sugar

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 2/3 cup cold butter

  • 2 egg yolks

  • pinch of salt

Fruit:

  • 2 lb plums ( washed and pitted)

  • 1 tsp corn starch

  • 1/2 tsp cinnamon

  • 5-6 tsp light brown sugar

Instructions:

1.Sift together flour, baking powder and cinnamon.

2.In a food processor combine flour mixture and sugar.

3.Add cubed, cold butter and pulse until the dough starts to crumble.

4. Add egg yolks and vanilla. Pulse couple more times until the dough comes together. Take the dough out on a lightly floured surface and form a ball. Wrap it with a plastic wrap and place it in a freezer for about 2 hours.

5.In the meantime prepare fruit, by mixing halved plums ( if using bigger plums, cut them in quarters ), corn starch, sugar and cinnamon.

6.Preheat oven to 350F

7.Line 9x13 baking pan with parchment paper. Take the dough out from a freezer and shred half of it , using a 4-sided grater ( use the side with oval openings).

8.Place the baking pan in a preheated oven and bake for 20 minutes.

9. Take the pan out of the oven and place plums, cut side up, and shred the remaining dough.

10. Bake for about 30-35minutes, until golden brown.
