Lemon Cardamom Cake
Ingredients :
2 large eggs
160 g all purpose flour
1 1/2 teaspoon baking powder
50 g unsalted butter ( room temperature )
50 g sunflower oil
150 g brown sugar
100 g sour cream (room temperature )
50 g lemon juice
zest of 2 lemons
1/4 tsp salt
1/2 tsp vanilla extract
1 tsp ground cardamom
Instructions:
1.Preheat ove to 350 F or 175C
2.Grease and flour 6-cup loaf pan ( I like to use organic Crisco to grease my pan)
3.In a medium bowl, sift together flour, baking powder, salt and cardamom. Combine with a whisk and leave aside.
4.In another bowl combine together sour cream, lemon juice and vanilla extract. These are your wet ingredients .
5.Using an electric stand/hand mixer, beat together butter, sugar , oiled lemon zest until pale and fluffy.
6.Add eggs, one at a time, mixing well after each addition until well combined.
7.Add dry and wet ingredients ,alternating, finishing with dry.
8.Fill prepared pan and bake approximately 40-45 minutes . The cake is ready when inserted skewer comes out clean.
9.Once the cake is done, leave it to cool in the pan, on a wire rack, for 15 minutes. Then turn it upside down leaving the canon and let it cool for another 15 minutes, before removing the pan to cool completely.
10. Dust with powder sugar and fresh fruit.
I also like to drizzle cut slices with a plum sauce.
