Lemon Skillet Cookie
Ingredients :
1 cup unsalted butter, softened
1 cup sugar
2 large eggs
zest and juice from 2 lemons
1/2 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp kosher salt
Vanilla ice cream, to serve (optional)
Instructions:
Preheat oven to 350 F. Spray a 10-inch cast iron skillet with baking spray. Set aside.
In a large bowl, beat butter and sugar with a mixer at high speed until fluffy. Add eggs, one at a time, beating until well combined. Stir in lemon zest, lemon juice, and vanilla extract.
In a medium bowl, mix together flour, baking powder, baking soda, and salt. Gradually add flour mixture to butter mixture, mixing until well combined.
Spread cookie dough into prepared skillet.
Bake until light golden brown and almost set in the center, approximately 30 minutes. Serve with vanilla ice cream if desired.
