Lemon - Thyme Cookies

Lemon - Thyme Cookies

Lemon-Thyme Cookies are perfect holiday tea time cookies.
The subtle sweetness of these cookies brings out the flavors of lemon, cardamom, and fresh thyme.
They are super easy and quick to make and they are my favorite year after year.

Makes: 36  Prep: 35 min.   Bake: 12min per batch


Ingredients:

  • 1/2 cup butter, softened

  • 1/4 cup granulated sugar

  • 1 tablespoon snipped fresh thyme

  • 2 teaspoons finally shredded lemon peel

  • 1 tablespoon lemon juice

  • 1/4 teaspoon ground cardamom

  • 1 1/4 cups all purpose flour



Instructions:

  1. Preheat oven to 350 F. Beat butter in a medium mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add 1/4 cup granulated sugar. Beat until combined, scraping side of bowl occasionally. Beat in thyme, lemon peel, lemon juice, and cardamom. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Knead mixture until smooth ; form dough into a ball.

  2. Divide dough into three equal portions. Roll each portion into 6 x 4 1/2“ rectangle (about 1/4 inch thick) on a lightly floured surface. Cut out circles with a cookie cutter.

Note: I recommend rolling dough directly on the parchment paper. After you cut the circles with a cookie cutter, slide the parchment paper on the baking sheet and place it in the refrigerator for about 20 minutes. Remove from the refrigerator and separate the cookies, leaving about 2 inches between them. They will be easier to handle and also they will keep their shape.

3.Bake in a preheated oven for 12 minutes or until edges are just lightly browned. Transfer cookies to wire racks and let cool.


TO STORE:

Place cookies in layers separated by pieces of waxed paper in an airtight container; cover. Store at room temperature for up to 3 days or freeze for up to 3 months.
