Chewy Gingerbread Cookies With Orange Glaze
Crisp gingerbread cookies are holiday classics, of course, but sometimes, you want to soften them up a little bit.
Chewy Gingerbread Cookies With Orange Glaze are the perfect combination of the classic spice flavors we all love and a chewy crumb that just about melts in your mouth. The aroma coming from your kitchen as you bake these tender cookies will make it the gathering place of the entire house.
Ingredients:
* 1/2 cup unsalted butter, softened
* 1/2 cup firmly packed dark brown sugar
* 1 tablespoon orange zest
* 1 large egg
* 1/4 cup molasses
* 1/4 cup honey
* 3 cups all purpose flour
* 2 teaspoons cinnamon
* 1 1/2 teaspoons ground ginger
* 1/2 teaspoon ground allspice
* 1/2 teaspoon baking soda
* 1/2 teaspoon kosher salt
* 1/4 teaspoon ground cloves
* 1/4 teaspoon baking powder
* 1/4 teaspoon ground cardamom
Orange Glaze:
* 3 cups of confectioner’s sugar
* 1/4 cup fresh orange juice
* 1 teaspoon orange extract
Instructions:
1. Preheat oven to 350 F.
2. In a large bowl, beat butter, brown sugar, orange zest, with a mixer at medium speed until creamy, 3 to 4 minutes, stopping to scrape sides of bowl. Add egg, beating to combine. Beat in molasses and honey.
3. In a medium bowl, whisk together flour, cinnamon, ginger, allspice, baking soda, salt, cloves, baking powder and cardamom. With mixer on low speed, gradually add flour mixture to butter mixture, beating until well combined.
4. Roll dough to 1/3 inch thickness on parchment paper. Using desired cookie cutters, cut though, re-rolling scrapes as necessary. Place on baking sheets.
Note: Rolling dough on parchment paper will guarantee your cookies will keep their shape.
It’s much easier that way, instead of rolling it on the counter and transporting it to the baking sheets.
5. Bake until edges are lightly browned, about 12 minutes. Let cool on pans for 2 minutes. Remove from pans and let cool completely on wire racks. Dip top side of cookies in Orange Glaze, and place on sheet parchment paper, glaze side up. Let’s stand until set, about 30 minutes.
