Easy Coffee Cake with Plums

Ingredients :

  • 2 lb plums

  • 2 cups all purpose flour

  • 3/4 cup butter

  • 1 cup sugar

  • 4 eggs

  • 1 tsp baking powder

  • pinch of salt

Instructions:

  1. Preheat oven to 350F.

  2. Coat Springform Pan with butter and sprinkle bread crumbs for easier cake release.

  3. Wash and dry plums, cut them in half and remove pits.Slice them in wedges inducing bigger plums, otherwise just cut them in half.

  4. Mix flour, baking powder and salt together, set aside.

  5. Melt butter in a medium saucepan.

  6. Add sugar to the melted butter. Mix well. Add flour and mix until just combined. Add eggs, one at a time and mix well to combine.

  7. Coat Springform Pan with butter and sprinkle bread crumbs for easier cake release.

  8. Pour batter in a prepared pan.

  9. Bake cake in a preheated oven for 50 minutes or until edges are golden brown.

Note:

I like to drizzle the cake with homemade plum sauce, but you can also serve it with Ice cream , whipped cream or by itself.

Homemade Plum Sauce:

Cut washed and dried plums in half and remove pits. Place them in a buttered roasting pan, big enough to just fit plums. Sprinkle brown sugar and cinnamon on top. Roast plums in 400 F for about 10 minutes.

If your plums are not ripe, you may add 1/2 cup of water to the roasting pan to help plums to release juices.

Let them cool and blend desire amount of plums in a blender ( you can slice roasted plums and use them for breakfast bowls, desserts or enjoy them solo ). You may add maple syrup to the sauce if you would like it to be more sweet.
