Best Brownies Ever

I love brownies!

It was when I moved to US in 1998, right after my wedding in Poland where I grew up, that I discovered brownies. In Poland we have all kinds of chocolate cakes, but not brownies.

Of course now, when you visit Poland you can find them everywhere, and they call them brownies too.

What I love about brownies is their dense texture and rich chocolate flavor. I have to say I made so many brownies over the years, but nothing was like the brownies you get from the coffee shop or a box.

So finally I came across this recipe that I love! It’s all I want from a little bite of this amazing dessert. It has a crunchy top and silky, smooth texture that is not cakey. It’s not fudgy.

You just have to try to make it yourself. I really hope you like it as much as I do!!!


Ingredients:

  • 1/2 cup (70 g) all-purpose flour

  • 2 Tbsp cornstarch

  • 1/4 cup (20g) dark chocolate cocoa powder

  • 1 tsp salt

  • 10 Tbsp (140g) unsalted butter

  • 3 oz bittersweet chocolate chips

  • 2 oz milk chocolate chips

  • 3 tsp mild oil (vegetable, canola, coconut)

  • 1 cup (200g) granulated sugar

  • 1/4 cup (50g) dark brown sugar, packed

  • 3 large eggs

  • 1 tsp vanilla extract

  • powdered sugar for dusting (optional)

Instructions:

1.Preheat oven to 350F and grease and line an 8x8 pan with parchment paper. Cut two strips the same with as the pan so that all sides the panzer covered in parchment paper over the edges for easy removal.

2.In a bowl, whisk together the flour, cornstarch, cocoa powder, and salt. Set aside.

3.Place the butter, chocolate, and oil in a bowl over a pot of simmering water, ensuring the bowl doesn’t touch the water.

4.Using a hand or stand mixer with the whisk attachment, whisk together the eggs and sugars on high until light and frothy. This will take only few minutes.

5.Making sure the chocolate isn’t too hot, turn the mixer down to low and pour in the chocolate in a slow and steady stream. Mix in the vanilla.

6.Take the bowl off the mixer and fold in the dry ingredients using a rubber spatula-careful not to over mix.

7.Pour the batter into the prepared panned bake for 20 minutes. Then, take it out of the oven, close the door, and drop it against the counter ( 5-7 times). Place it back in the oven to bake for another 18-20 minutes.

8.Let the brownies cool completely, in the pan before removing and cutting. Top with a dusting of powdered sugar if you like.
