Chocolate Nut Bark

This recipe is definitely going to lend in your ” favorite “ folder. I sometimes struggle with making desserts, or sweet treats, because my priority is always to eat healthy and not to add too much sugar.

Well, this is going to be your recipe to go to. So delicious and really easy to make. I keep it in a storage container in the fridge and my family loves to snack on it.

Ingredients :

1 cup almonds

1 cup walnuts

2 1/2 cups pitted dates, chopped

1 tsp salt

1/2 cup water

1 1/2 cups Rice Crispy cereal

1 1/2 cups old fashioned oat

1 tsp cinnamon

3 cups dark chocolate, chopped ( or semi sweet chocolate if you prefer )

2 Tbl coconut oil





Method:



  • Preheat oven to 350F (180 C ). Line a baking sheet with parchment paper.

  • Spread almonds and walnuts on the baking sheet and toast them for about 15 minutes, until fragrant.

  • In a food processor or blender, combine the dates, salt, and water, and process until well-combined.

  • Transfer the date mixture to a large bowl and add the rice cereal, oats, cinnamon. Stir until well- combined. Add chopped nuts and fold to combine.

  • Transfer the mixer to a parchment-lined baking sheet and spread with a spatula.

  • Cover with plastic wrap and chill in the fridge for 45 minutes to set.

  • Melt the chocolate with a coconut oil and pour 2/3 of the mixture over the nut mixture and spread evenly. Cover with plastic wrap and freeze for 10 minutes.

  • Invert the nut mixture onto a cutting board and remove the parchment paper. Drizzle the remaining chocolate over the top. Return to the freezer for 10 minutes.

  • Cut it into bars or break it into chunks.

You can store it in the refrigerator or freezer until you are ready to enjoy it!
