Walnut Crusted Salmon
I love this recipe not only for its incredible flavor, but also because it takes 5 minutes to prepare it. Super crunchy crust and delicious lemon glaze make this salmon recipe epic!
Salmon and walnuts are both great source of omega - 3 fatty acids, so this recipe is not only delicious but super healthy!

Ingredients :
1 pound salmon fillet
1 tbl olive oil
juice and zest from 1 lemon
1/2 tsp honey
1 Tbl reduced sodium soy sauce
2 cloves garlic, minced
1 tbl freshly grated ginger
2 tsp cornstarch
1/2 tsp crushed red pepper
3 tbl panko breadcrumbs
1/4 cup finely chopped walnuts
1/4 fresh parsley leaves
salt and pepper to taste
Instructions:
Preheat oven to 400 F
To make a crust, combine walnuts, pinko breadcrumbs and parsley until mixture resembles coarse crumbs
Season salmon fillet with salt and pepper,
In a large oven proof skillet heat olive. Divide salmon into portions and dredge each portion with walnut mixture.
Add salmon to the skillet and sear until golden brown, 2 minutes on each side.
Place the skillet in the oven and bake for 8-10 minutes. Fish should flake easily with a fork.
To make a glaze, combine juice and zest from 1 lemon, honey, soy sauce, garlic, ginger, red pepper flakes, and cornstarch in a small saucepan over medium heat. Bring to a boil; reduce heat and simmer for about 4 minutes until mixture slightly thickens.
Serve salmon immediately and drizzle with lemon glaze.
Note: * Serve it with a salad, quinoa , Smashed Potatoes or side of roasted potatoes.
