Smashed Potatoes

Smashed Potatoes

Smashed Potatoes are a great side dish or after school snack. My kids love to dip them in ketchup or pesto sauce. 

You can serve them for dinner with your favorite protein and salad. They are crowd pleaser for sure.


You will need:

  • 20 yellow baby potatoes

  • 2 tablespoons olive oil

  • 3 cloves garlic, pressed

  • rosemary and parsley (fresh)

  • Kosher salt and freshly ground black pepper, to taste

DIRECTIONS:

  • Preheat oven to 450 degrees F.

  • In a large pot of boiling water, cook potatoes until tender ( make sure to not overcook) about 15 minutes; drain.

  • In a small bowl mix olive oil and garlic.

  • Place potatoes onto baking sheet. Using a fork, carefully smash the potatoes until flattened but still in one piece. Brush each potato with garlic olive oil and sprinkle with chopped herbs.

  • Place into oven and bake for about 20 minutes, or until golden brown and crispy.
