One Pot Spinach Walnut Pesto Pasta
I am very excited about sharing this recipe, because it’s so quick (about 30 minutes total time), you only need one pot and food processor or blender. It is ideal for busy families or young professionals who don’t want to spend hours in the kitchen but care about nutrition and clean eating. I myself just discovered one pot pasta dishes and I am in love with them, especially this one!
Ingredients :
11 oz. baby spinach
handful of fresh basil
3 Tbl olive oil
4 garlic cloves
1 lemon
1 cup walnuts
1/4 cup parmesan cheese
5 cups water
1 lb linguini pasta
1/2 tsp nutmeg
salt and pepper
Instructions:
Make pesto:
1. Place spinach, basil, walnuts, lemon juice, nutmeg, a dash of salt and pepper in a food processor and pulse until smooth consistency. You may need to add a little water if the pesto is too dry. I usually add 1 Tbl at a time. You don’t want it to be too runny.
2. Put it aside.
In a large sautéing pan, heat the oil and sauté garlic for about 30 seconds until just fragrant.
Place pasta in a pan and add 5 cups of water. Cook for about 15 minutes, until water is absorbed, stirring often to prevent sticking. After all liquid is absorbed, remove from heat, add pesto and cheese. Stir gently until all pasta is covered with pesto.
Garnish with additional cheese and fresh basil. Add more salt and pepper, according to your taste.
