Spinach Nest with Egg


I got inspired by a bird’s nest outside my kitchen window. Every year a pair of bird comes and builds the nest in the same spot. After the eggs hatch the couple works so hard as a team to bring food to their babies. I could sit and watch them for hours.

Spinach for me is one of the green, leafy vegetables that I could eat for breakfast, lunch and dinner. It’s packed with nutrients and low in calories. Who doesn't like that? So if you’re interested in boosting your health, spinach would be an easy food to add to your diet.

When I go grocery shopping, spinach always lands in my cart. It’s my refrigerator essential.

This healthy breakfast option is a fast and easy way to start your day with a boost of nutrition. And it’s so pretty. I like my meals to look beautiful. It gives me another boost and I love watching my family’s reaction when they see a beautifully crafted meal.

Ingredients:

  • 1 cup of frozen spinach (thawed and drained), if you are using fresh firs blanched it and squeeze access of water

  • 1/2 onion, chopped

  • 1 garlic clove chopped

  • 2 Tbls of oats

  • salt

  • pepper

  • egg

  • avocado oil or olive oil

Method:

  • Put 1 Tbls of oil in a fraying pan. Sauté onions until shiny, about 3 min and add garlic for just 10 seconds, so it doesn't get brown. Add spinach and sauté it with onions for couple of minutes and then add oats. Add salt and pepper according to your taste. Stir everything together and cook for another minute . Arrange the spinach mixture on a plate in a nest shape.

  • Cook the egg sunny side up. After the egg is cooked place it on top of the spinach nest and sprinkle with red pepper or black pepper.
