These Power Cookies are packed with ingredients to give you great nutrition and energy. This high fiber, high protein, low in fat and absolutely delicious cookies make a terrific snack for my kids lunch boxes and mid afternoon snack for me. If you are a person who doesn't like large breakfast, this cookie will be a fantastic choice to start your day with.

Ingredients :

  • 1 cup old fashion oats

  • 1/2 cup almond flour

  • 3/4 cup dried cranberries

  • 1/2 cup pumpkin seeds

  • 1/2 cup sunflower seeds

  • 1 Tbl chia seeds

  • 2 Tbl ground flaxseed

  • 1 tsp cinnamon

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 1 banana ,mashed or 1/2 cup applesauce

  • 1/3 cup nut butter ( I used cashew butter )

  • 2 Tbl honey

  • 2 Tbl plant based milk ( I used almond milk )

Instructions:

1.Preheat oven to 325F. Combine dry ingredients in a large mixing bowl - oats, flour, dried cranberries, pumpkin seeds, sunflower seeds, chia seeds, ground flaxseeds, cinnamon, baking powder, and salt.

2.Add mashed banana ( or apple sauce) , nut butter, honey, almond milk and mix well. Let the mixture stand for 5 minutes, allowing chia seeds and flaxseeds to bind everything together. If your dough is too thick, add additional tablespoon of almond milk.

3. Drop 1/4 cup of the dough on a lined with parchment paper cookie sheet. Gently press the dough with the palm of your hand to flatten cookies a little bit.

4.Bake for 18-20 minutes, or until cookies are lightly golden around the edges.

Note* You can store them in airtight container for 2-3 days.
