Grapefruit Basil Relish
Ingredients:
2 red grapefruits
1 small shallot, minced
2 tablespoons chopped fresh basil
2 teaspoons lemon juice
2 teaspoons extra-virgin olive oil
1 teaspoon of honey and more for drizzle
Instructions:
Cut peeled grapefruits into wedges and then slice crosswise into 1/2 -inch thick pieces.
In a small bowl combine shallots, basil, lemon juice, oil and honey. Stir in grapefruits and let sit for 15 minutes. Season with salt and pepper to taste. Drizzle with additional honey if needed.
Note: relish can be refrigerated for up to 2 days.
