Cream Pie Parfaits

Cream Pie Parfaits

Ingredients :

  • 1 cup full-fat coconut milk (from a can) 

  • 3 tbsp coconut sugar

  • 1 tsp vanilla extract

  • pinch of salt

  • 2 tbsp tapioca flour (can sub cornstarch) 

  • 1 cup plant-based milk (I like almond milk) 

Other ingredients :

  • 2 bananas,sliced

  • 8 graham crackers, crushed

  • 2 cups whipped cream, or if you would like to make it vegan, coconut whipped cream

  • shredded chocolate or chocolate chips (optional)

Instructions:

  1. Add the coconut milk, coconut sugar, vanilla extract and salt to a small pot and bring to boil.

  2. Reduce the heat to medium-high, stirring every minute for about 10 minutes until the mixture thickens into a dark colored caramel.

  3. Mix the tapioca flour and plant-based milk together and add to the pot medium heat.

  4. Mix together until the mixture thickens into a creamy pudding, then remove from heat and let sit and colt room temperature.

  5. To assemble the parfaits, add layers of graham crackers , pudding, whipped creamed bananas, repeating each layer until cup is full.

  6. Sprinkle with shredded chocolate or chocolate chips.

You can also use the pudding in your fruit breakfast bowl.

Notes:

Be patient while making the pudding. You want to let the Carmel mixture form to get rich delicious taste.
