Blueberry Cream Cheese Muffins
This blueberry muffins are definitely going to be your favorite ones. They are made with cream cheese which adds the most delicious flavor. They are moist and fluffy, and they are topped with a crumbly streusel and edible pansy flowers. You can replace the flowers with additional blueberries, if you like, or just top it with streusel.
They are gluten free and made with simple ingredients.
This recipe is another one that you can make with your kids, they will love it! What a great way to spend time together.
Prep time: 10 min. Cook time: 25 min. Servings: 12
Ingredients:
2 1/4 oat flour
2 eggs
2/3 cup whipped cream cheese
1/3 cup milk ( of you choice)
1/3 cup coconut oil (melted)
1/2 cup sugar
1 1/2 tsp vanila extract
1 1/2 tsp baking powder
1 cup blueberries
Streusel:
1/4 cup sugar
3 Tbl melted butter
5 Tbl almond or coconut flour
Instructions:
1. Preheat oven to 350F and line muffin pan with paper cups.
2.In a medium mixing bowl, whisk together eggs, and whipped cream cheese until smooth. Mix in coconut oil, sugar, vanilla extract, and milk.
3.In a separate bowl, combine dry ingredients (flour and baking powder)
4.Add the dry mixture into the wet and mix until well combined. Gently fold in blueberries.
5.Mix all the streusel ingredients together.
6. Fill each muffin cup with butter and sprinkle streusel mixture on top.
7. Bake for 22-25 minutes
