Zucchini Pesto Pizza Pinwheels

Most kids love pizza, so why not make it fun and healthy at the same time. These pizza rolls are packed with greens from pesto and zucchini. They are easy to make and your kids will be excited to help. After I made this recipe the first time, all the rolls were gone with no time and my family requested to make it again. It was a winning strategy, fun and healthy.

You can make them ahead of time and tuck them in the freezer, and they would be a great lunch option (if the kids ever return to school after the quarantine!).

In this recipe I used pesto and zucchini. I’ve used pesto since my kids were born. It was a great way to hide all the green veggies, that sometimes they are not kids favorites. Pesto is by far a must have in my kitchen. I make it from spinach, basil, kale or parsley. It’s packed with vitamins and you can use it in so many different ways: as a spread for sandwiches, with pasta or on your pizza!!!

Ingredients :

1 pound pizza dough

1/2 cup basil pesto

2 zucchini , thinly sliced

2 cups shredded mozzarella cheese

1 cup marinara sauce, warmed

Instructions:

1. Arrange a rack in the middle of the oven and heat to 400F. Coat the standard muffin tin with cooking spray.

2.Place the dough on a work surface and use your hands or a rolling pin to stretch it into an 11 x 16 -inch rectangle. Spread the pesto evenly on the dough. Place the zucchini slices evenly over the pesto, then sprinkle it evenly with the cheese.

3.Starting at a long end, roll the dough up into a tight log. Place on a cutting board seam - side down. Cut crosswise into 1 - inch - thick rounds.

4.Place a round cut - side up into each muffin well. Bake until golden brown, 20-25 minutes. Serve with warm marinara sauce on top.

*You can store leftover rolls in an airtight container in the refrigerator for up to 4 days, or they can be frozen for up to 3 months in the freezer in a zip-top freezer bag.
