I just love this recipe. I’ve heard about cauliflower meat before, but never made it myself. I have to say I am very excited to share this recipe with you, because its not only healthy, but it is very tasty. Cauliflower is becoming more popular in the recent years, but some of my friends don’t like to use it because of its taste ( I can’t relate, I love cauliflower!!! My favorite way to eat cauliflower as a kid, it was cooke it, and then sautée it in butter with bread crumbs-yum).

Top your tacos with your favorite toppings and drizzled it with Creamy Cilantro Sauce

This recipe is awesome and you must give it a try!


Ingredients :

1/2 head cauliflower, chopped (about 3cups)

2 cups walnuts

1/2 Tbs chipotle pepper sauce ( I substituted it with poblano pepper)

3 cloves garlic

1 Tbs ancho chile powder

2 tsp cumin

1 tsp salt

1/2 tsp black pepper

1/4 tsp oregano



Instructions:

1.Prehaet oven to 375 F and grease large baking sheet

2.Place chopped cauliflower , walnuts, chipotle adobo sauce, spices, salt and pepper in bowl of food processor ; pulse until cauliflower and walnuts have broken down into small pieces. Transfer to baking sheet and bake for 25-30 minutes; giving the mixture a stir halfway through baking time. Remove from oven and cool on sheet.

3.Enjoy on tacos, salad bowls and more. Store in covered container in refrigerator up to 4 days.
