One Pot Quinoa and Bean Pilaf

This one pot Quinoa and Bean Pilaf is a super yummy and mega healthy choice for a quick weekday night.

You can serve it as a main meal or side dish, or if you have leftovers it could be a great lunch the next day.

I used red quinoa, but white quinoa will be also great.

Ingredients:


  • 2 tablespoons extra-virgin olive oil

  • 2 bell peppers (1 red, 1 green), forced

  • 3 scallions, sliced ( white and green parts separated )

  • 2 stalks celery, diced

  • 4 cloves garlic, chopped

  • 2 tablespoons tomato paste

  • 1 cup quinoa ( uncooked )

  • 1-15 ounce can of black beans, drained and rinsed

  • 4 cups baby baby spinach

  • 1/2 cup cilantro, chopped

  • Kosher salt ( to your taste)

  • 1/2 teaspoon red pepper flakes

  • pinch of cayenne pepper

  • hot sauce or siracha for serving ( optional )

Instructions:


  1. In a large skillet heat the olive oil over medium - high heat. Add the bell peppers, scallion whites, celery, 1/2 teaspoon of salt and cook, stirring until soft, about 5 minutes. Add the garlic, tomato paste, cayenne, red pepper flakes and cook stirring often for about 2 minutes. Stir in the quinoa, then add 2 cups water and the beans. Bring to a simmer and cook, stirring often, until most of the water is absorbed and the quinoa is cooked through, about 15 minutes. Add up to 1/4 cup more water if necessary.

  2. Remove the skillet from the heat and stir in the spinach until just wilted. Add more salt to taste, green scallion greens and cilantro. Drizzle with hot sauce if you would like.

  3. Serve hot or at room temperature.
