This pancakes are not just quick and easy to prepare, but super heathy, and my favorite - kids can make them!!!
I like to make my pancakes small and pile them up into a pancake tower.
Since it’s Mother’s Day today I thought, all the mamas need some indulgence, so I topped them with a hot chocolate ganache . I like to top my pancakes with frozen berries . Frosted berries on hot ganache make it look so fancy :)

This recipe makes about 6 small pancakes.
Ingredients:
1 large ripe banana
1 egg
1/4 cup rolled oats
1/4 tsp baking powder
pinch of salt
Instructions:
Place all the ingredients in a small food processor or blender and bled until smooth. Let the batter stand for 20 sec. Heat a skillet or griddle over the medium heat and a little bit butter or coconut oil.
Pour about 1/4 cup or less of the batter into the skillet and cook on each side until they are golden brown.
Serve them with your favorite topping.
Make sure you use ripe banana . The riper the banana the softer and sweeter the pancakes.
This pancakes freeze well and you can have them handy as after school snack
Chocolate Ganache:
2 oz high quality milk or dark chocolate
1/4 cup heavy whipping cream
Place the chocolate and cream together in a small saucepan and simmer until chocolate is melted and then vigorously stir them together. Be careful not to overheat the chocolate. If you have a microwave you can use it for 30 sec.
*This recipe can easily be doubled or tripled.
