Peppermint Meringues
An easy recipe and in my opinion very festive. My 10 year old daughter had a lot of fun helping me crack the eggs and paint lines in a pastry bag.

Ingredients :
3 egg whites
Pinch of salt
3/4 cup of sugar
1/4 teaspoon cream of tartar
3/4teaspoon peppermint extract
Red gel food coloring
Instructions:
Preheat the oven to 250 F. Line 2 baking sheets with parchment paper. Beat the egg whites with the salt in a large bowl with a mixer on medium - high speed until frothy. Gradually beat in the sugar and cream tartar until stiff peaks form, about 6 minutes. Add the peppermint extract; beat 2 minutes.
Paint four 1/4 - inch - wide stripes of red food coloring inside a pastry bag fitted with a 1/2 - inch round tip. Transfer the meringue to the bag. Pipe 2 - inch spiralsaboud 2 inches apart on prepared pans.
Bake the meringues 1 hour. Turn off the oven; leave the meringues in the oven to finish drying, about 2 more hours. Transfer the pans to racks to cool completely .
