Homemade Broth

The best homemade broth, easy, healthy and delicious.

You will start with a big pot of water, whole chicken and one or two beef bones. Bring it to a boil and collect the foam that will accumulate on the top. Boil for about 10 minutes and keep collecting and discarding the foam. If you would like to make a vegetarian broth, omit the meat.

Lower the heat to low and add all veggies:

^onion

^leek

^5 or more garlic cloves

^carrots

^parsnips and parsnips greens

^celery root, greens and celery stalks 

^turnip

^green cabbage

^piece of ginger

^bay leaves ( for medium sized pot I would use 2 bay leaves)

I am not listing quantities, because they will depend on the size of your pot. 

Simmer for 6 or more hours, I like to simmer my broth for about 10 hours.

It’s important that after you collect the foam and add your veggies, you will turn the heat to low. Your broth will remain clear and it also allows all the minerals, vitamins and flavors slowly release.

Add salt and pepper.

After the broth is finished cooking, it’s ready to be used in any soup recipe.
